Apple and Cinnamon Tea Cake GF

If you are wondering how to impress visitors with your gluten free baking? This will do the trick for sure! Everyone loves a cinnamon tea cake.


4 thinly sliced granny smith apples

300g unsalted organic butter

1 C panela sugar

1 tsp vanilla essence

4 free range eggs

1 C almond meal

1 1/3 C gluten free plain flour

1 Tbsp baking powder

1 tsp cinnamon

pinch nutmeg


Apricot Jam for brushing at the end


Preheat oven to 180 degrees

Generously grease a square cake tin with butter, sprinkle with sugar and arrange half the apple slices on the base of the tin.

Beat butter, sugar and vanilla until creamy in a large bowl.


Add eggs one at a time with mixer going.

Add flours, baking powder, cinnamon and nutmeg and mix with a spoon until just combined.

Spread half of the batter over the apple, layer with remaining apple, spread rest of the batter over the top.

Bake in oven for 50mins ( I covered mine with alfoil for the last 15 mins so that it didn't brown too much )

Let cool for 10 mins before turning out onto cake rack.

Brush over the top with a small amount of apricot jam for a glossy finish. Dust with cinnamon.
